Naengmyeon[1] (냉면, 冷麵, en Corea del Sur) o raengmyŏn (랭면, en Corea de Norte) es un plato de fideos de origen norcoreano que consiste en fideos largos y delgados hechos a mano hechos de harina y almidón de varios ingredientes, incluyendo trigo sarraceno (메밀, memil), papas, patatas dulces, almidón (color más oscuro y más chisto que los fideos de trigo sarracento), y kudzu (칡, chik). El trigo sarraceno predomina (a pesar de su nombre, no es un trigo, sino que está más estrechamente relacionado con el sorrel). Otras variedades de naengmyeon se fabrican con ingredientes como algas marinas y té verde.
En tiempos modernos, la variante mul naengmyeon (물 냉면) es comúnmente asociada con y popularmente consumida durante el verano; sin embargo, fue históricamente un plato disfrutado durante el invierno.[2][3][4]
